Some tour guides recommend more shopping in Bethlehem because the merchants in Bethlehem have more financial stress. But, you may shop for souvenirs or any item in Bethlehem or Jerusalem or anywhere you desire.
Life in Israel is comparable to France, England and America in every aspect with a Mediterranean touch in food and mannerism.
Security is subtle and of highest level. Israel has one of the highest security networks without intrusion in your personal life as the British or Americans do.
It is a good idea for men to bring a hat (cap - beret - yarmulka - yamaka - kepi - kippah - chapeau - fedora ..etc.) to wear in respect to the Jewish culture. We do not have to wear it since we are Americans, but it would be nice. You will see also many Jews who do not wear the kippah.
I remove my hat during prayers because the Bible stated that men should not cover their heads when praying or prophesying while women should cover their heads. The wearing of the kippah (yarmulka) hat is invented by the rabbis(*1) to defy the Scriptures inspired by God through the Apostle Paul. Now it is a cultural marker for all Orthodox Jews.
(*1) Rabbi Yossef Karo indicated the kippah in the Schulchan Arukh. Ramban indicated that men should cover their head when praying. Rabbi David haLevi Segal and Rabbi Ovadia Yossef indicated that it is obligatory to distinguish the Jews from others. Rabbi Haim David Yossef Azulai indicated that it is for piety. Remember, even good men cannot change the Law of God as inspired through the Apostle Paul.
